Nintendo owns a part of the IP, no?

They do, but they are minority owners.

I mainly included it because everyone else does in these discussion, but technically Nintendo has nothing to do with the licensing agreement that brings Pokémon into the parks.

They do have a say. It’s equal ownership between them, Game Freak, and Creatures.

Star Fox is worth it because it's cute animal characters in space with a gameplay style that can easily translate into a theme park ride.

How do you translate Zelda into a ride? Star Fox is pretty cut and dry and could be a pretty easy crowd pleaser even if people aren't familiar with the IP walking in.

Somewhat, but it is limited. They have the right to get involved if they feel they need to, but they have generally remained hands-off in projects that don't pertain to the console video games.

It’s a Nintendo property in the sense that they enough of it for it to always be exclusive to their video game console hardware. It’s basically theirs.
